  22. 1 tsp sugar

  24. as required Chopped coriander leaves for garnishing

Steps to make to make Beetroot Pulao

  1. Firstly let's prepare the beetroot stuff. For that heat a pan, add some kalounji,let them splutter then add slit green chilli. Then add sliced onion. Fry them until the onion becomes slightly tender.
  2. Then add the grated beetroot in it. Mix everything well. Then add some coriander powder, cumin powder, salt and sugar. Mix everything well. Now cover it a d cook it for 2 to 3 minutes.
  3. After 3 mins sprinkle some water so that the beetroot doesn't gets burnt. Then again cover it and cook it for 3 more mins. Then your beetroot sabzi for pulao is now ready. Now in the same pan saute the capsicum pieces for about 2 mins. Now keep this aside.
  4. Now take a pressure cooker and add some ghee in it. Then add all the khada masalas mentioned above like green cardamom, cloves, cinnamon stick, bay leaf, some curry leaves and dried red chilli. Let them splutter then add the rice in it. Mix everything well together. Now fry them until the rice becomes pure white in colour, as shown below. Now add the above-mentioned amount of water. Give it a mix.
  5. Now add the beetroot sabzi into it. Mix it. Then add green peas into it. Then add salt and sugar as per your taste. Give everything a good mix.
  6. Now cover the pressure cooker and wait for 3 whistles, on a high flame. Then lower down the flame completely and wait for 8 minutes. Then switch off the flame. Let the pressure release completely from the cooker.
  7. Once the pressure releases completely, open the cooker then add the stir-fried capsicum slices and some chopped coriander. Gently mix everything well. Serve it hot with any veg/non-veg dishes of your choice.
