  1. Handful Brussels sprouts
  2. 3-4 chestnut mushrooms
  3. Chilli Flakes
  4. knob butter
  5. Pickled onion (from my picked beetroot recipe)
  6. Tempura
  7. 2 tbsp plain flour
  8. 1 tbsp medium curry powder
  9. Sprinkle dried thyme
  10. salt and pepper to taste

Instructions to make to make Tempah Brussels Sprouts & mushrooms

  1. Mix tempura ingredients with a little water to make a loose batter similar to pancake mixture consistency.
  2. Prep brussels sprouts by trimming and cutting them in half. I tend to just do a handful for a small to medium portion for one as I'm the only person in my house that like Brussels so its always a treat just for me :)
  3. Place sprouts in the tempura batter mix and coat completely. Fry in a hot pan with a little oil until the batter is crispy and golden. Remove from the pan and rest on kitchen towel.
  4. In the same pan reduce heat to medium to low and add a knob of butter. Add chilli flakes, thyme and sliced mushrooms. Season with salt and pepper.
  5. Plate up. Serve mushrooms with the Brussels and pickled onion from my chilli Beetroot onion recipe :)
